The authors examine the problem of the quality of melons in relation to the best moment of harvesting and to the rapidity of cooling before marketing, considering the advantages of hydrocooling and top-icing which, by ensuring rapid arrest of ripening, make it possible to harvest the fruit in a much more advanced stage of ripening than is done at present, and thus with high organoleptic properties.
