The knowledge about the biotechnology of the production in captivity as well as the resulting chemical and biochemical composition of caviar both from wild and farm sturgeons, is very limited. this was the reason for the establishment of an eu project (1997-2000) on this subject. the various new results of this project encouraged us to combine the closing session, organised in berlin in march 2000, with a symposium comprising related aspects in sturgeon reproduction and conservation. this symposium was a forum for the discussion of future trends in sturgeon farming, serving a nucleus in the development of new projects concerning the production of caviar from farmed sturgeons as related to various other issues in reproduction and conservation. in particular the various issues on conservation can only be conducted successfully on the basis of intensive and continuous international cooperation and discussion.
