The papers contained in this volume represent the proceedings of a conference held at Institut d'Economie Industrielle, Toulouse in October 1993. Fourteen papers covering a substantial part of the modern industrial organization of agriculture and agri-food industries, are presented, most particularly three aspects of the functioning of agricultural markets : its mechanics, its failures and its regulations.
