This paper is a review of the washing of minimally processed vegetables, conducted by the Australian Food Industry Science Centre for the Co-operative Research Centre (CRC) for International Food Manufacturing and Packaging Science. The objective was to review and report on existing washing technology, and explore new advances which may improve the quality and safety of minimally processed horticultural products.
