COST 91 is a concerted action inaugurated by the organization COST (Coopération Européenne dans le domaine de la recherche scientifique et technique) concerning research on effects of thermal processing and distribution on the quality and nutritive value of food. Methods are selected for vitamins A, C and E, ?-carotene and thiamin and tentative methods for riboflavin, vitamin B-6 and vitamin D. For niacin and folic acid only some references could be given because none of the existing methods satisfied the requirements of the group. It was not considered possible to give even references to methods for estimating vitamin B-12, vitamin K, pantothenic acid and biotin. The manual is intended for laboratory workers and scientists involved in research work on food technology, nutritional surveys, establishing food composition tables and the quality control of food.
