Hydrodynamic properties in an industrial scraped surface heat exchanger and its scale-down model are studied. The extrapolation up to industrial scale of results observed in the model allowed us to show the causes leading to the appearance of thermal heterogeneities at the industrial exchanger outlet, and to reconsider the flowing patterns in this type of exchanger.
