The authors show the advantages connected with the use of hydro-cooling, top-icing and vacuum cooling in opposition to air cooling, seeing that they are capable of valorizing the product for export channels. The necessity is stressed of using the pre-cooling rather than storage method, the technological characteristics are also theorized that must be presented to the fruit and vegetable packing house and delivery in order to agree with the technical and economical aspects in relation to the characteristics of the product.
