The potential uses of ultrasonic temperature measurement in food processing systems were investigated using invasive and non-invasive sensors. Studies are currently underway to optimize and standardize procedures in order to achieve microbiological and organoleptic quality of processed food products manufactured by processes using the sensors for temperature measurements.
