The perishable nature of meat and dairy products ensures an emphasis on speed in handling. Wastage in fruit and vegetables is accepted but loss of quality also results during transport. Containers provide a controlled environment for the products, and transportation must involve a minimum of handling. The 4 possibilities for containers for handling perishables are : standard non-insulated, insulated container non-refrigerated, insulated refrigerated container, insulated refrigerated controlled atmosphere container. A multi-purpose van container developed by USDA Transportation department is described. Precooling of the product prior to storing in a refrigerated insulated container is necessary. Use of a clip-on refrigeration unit eliminates the necessity for operating the plant under difficult conditions. The advantages and disadvantages of palletisation are discussed.
