L'agriculture de la Communauté d'Agglomération du Pays d'Aix est une agriculture périurbaine, avec les inconvénients et les fonctions que cette localisation implique. La pérennisation des exploitations agricoles est donc un enjeu important pour la communauté d'agglomération, et l'amélioration de la valorisation des productions agricoles peut être un moyen de cette pérennisation. Dans ce travail nous avons étudié l'exemple de la valorisation des productions légumières, et plus particulièrement les circuits courts de commercialisation. La proximité de la ville, et donc des consommateurs, peut en effet faciliter l'utilisation des circuits courts de valorisation pour les producteurs. Nous avons dans un premier temps délimité trois secteurs d'étude au sein de la communauté d'agglomération, caractérisés par deux degrés d'urbanisation différents. L'étude d'un échantillon d'exploitations agricoles (26) de ces trois secteurs a montré que la valorisation des légumes en circuit courts était indispensable au maintien de certaines exploitations, notamment les exploitations maraîchères. On trouve ce type d'exploitations dans les communes du sud d'Aix-en-Provence, où elles sont majoritaires, et dans le bassin de Rognes-Lambesc. Dans le bassin de Rognes-Lambesc, des marchés "paysans" ont été créés à l'initiative des producteurs. Ils leur permettent d'écouler la totalité de leur production en vente directe. Ce système pourrait être transposable aux communes du sud d'Aix-en-Provence, mais les agriculteurs y sont plus âgés et ne se sont pas regroupés pour prendre ce type d'initiative. Ils commercialisent une partie de leur production sur les marchés de détail des communes environnantes. Les exploitations situées dans la vallée de la Durance quant à elles utilisent très peu les circuits courts de valorisation. Leur structure semblerait pourtant adaptée à la vente directe aux GMS. Dans tous les cas, l'utilisation des circuits courts de valorisation est limitée par le manque de matériel et de main d'oeuvre dans les exploitations. L'aide à l'investissement et à l'embauche pourrait donc être un moyen de contribuer au maintien des exploitations agricoles périurbaines dans la Communauté du Pays d'Aix.
The agriculture of the "Communauté d'Agglomération du Pays d'Aix" is a periurban agriculture, with the difficulties and the functions that this localisation implies. So the perpetuation of farms is an important stake for the "communauté d'agglomération". Improving the valorisation of agricultural produces can be a mean of this perpetuation. In this work we studied the example of the valorisation of vegetables, and particularly the short commercial channels. The proximity of town is susceptible of facilitating the utilisation of short commercial channels for the producers. Firstly, we have delimited three sectors into the "communauté d'agglomération", characterised by two different degrees of urbanisation. The study of 26 farms in these three sectors shows, that the valorisation of vegetables using short commercial channels is essential for the existence of some farms, particularly of market garden farms. This sort of farms is found in the south of Aix-en-Provence, where they are majority, and in the Rognes-Lambesc basin. In the Rognes-Lambesc basin, "producers" markets have been created by producers. They are able to sell all their production on these markets. This system might be transposable in the south, but the producers of this sector are older and they did not take this initiative. They sell a part of their production on the markets of neighbouring towns. The farms situated in the valley of Durance use little short commercial channels, however their structure might be adapted to direct sell to supermarkets and hypermarkets. In all cases, the utilisation of short commercial channels is limited by a lack of equipment and labour in farms. Helping to investment and engaging could be a mean of contributing to the existence of periurban farms in the "Communauté du Pays d'Aix".
